Sausage, Peppers and Onions1 pound hot Italian sausages 1/4 cup olive oil, 1 (15-ounce) can diced tomatoes 4 garlic cloves, sliced thin 2 large onions, thinly sliced 1 teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon sweet paprika 1 teaspoon garlic powder 1/2 teaspoon sugar 3 large bell peppers (1 red and 1 green 1 yellow), cut into thin strips salt and black pepper to taste 1/4 teaspoon red pepper flakes, optional 1/4 cup wine In a pot boil sausage. Meanwhile in a large frying pan heat oil and saute' onions and garlic, add peppers and all dry ingredients stir to combine and cook till peppers are tender stirring frequently.Add tomatoes and wine stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Cut sausages into pieces each, transfer sausage to the pan and stir to combine. Cook until sauce has thickened. |
