Cassaroles
Cindy's potato zucchini cassaroleThis is one of my cousin Cindy's creation, and it's very good, I cooked this last night and I went for seconds that's how good it was.. She even made sandwiches with her leftovers, now that's a great idea.
3 medium zucchini sliced about 1/4 inch thick 4 medium potatoes sliced about 1/4 inch thick 1- 28 oz diced tomatoes Grated parmesan cheese to your like Bread crumbs salt and pepper to taste dry basil flakes to taste olive oil to drizzle garlic powder to taste Preheat oven at 350 degrees F. Drizzle olive oil on a 13x9 baking pan layer potatoes then zucchini, pour half of the diced tomatoes over it, sprinkle dry basil and garlic powder to taste, then sprinkle lots of cheese as much as you desire. Do the same with the second layer then add bread crumbs on top and drizzle olive oil over it. Cover and bake for 45 minutes or until zucchini and potatoes are tender, uncover and bake for another 15 minutes until bread crumbs are lightly browned. |
