Mom's pasta asciutta con la ricotta (Mom's dried ricotta pasta)Our mom used add warm milk if it was too dry,
so it would be more creamer, some of us didn't like it too dry. I like to use more of the ricotta cheese when I make it. Ingredients: 1 pound any kind of pasta 1/2 pound ricotta 3 tablespoon of milk 1 tablespoon melted butter salt and pepper Grated Romano cheese Directions: Bring water boil and salt it lightly add pasta and cook according to package directions. Meanwhile place ricotta in a bowl add water and butter and keep mixing until ricotta is softened. Drain the pasta and right away before it stops dripping and tranfer it into a bowl, add the ricotta and stir, sprinkle top of pasta portions with grated cheese. |
